Questions

Should I use v4 or v7?

Use v4 when you only need a unique ID. Use v7 for database keys: it starts with a timestamp, so new rows land next to each other in an index, which is usually faster to insert than random v4 keys. The trade-off is that a v7 ID reveals roughly when it was created.

How random are they?

v4 UUIDs come from your browser's crypto.randomUUID(), which uses a cryptographically secure generator, and have 122 random bits. v7 UUIDs use crypto.getRandomValues() for their random part. Math.random() is never used.

Are v7 UUIDs made in the same batch in order?

Yes. Many IDs can share a millisecond, so a counter inside the UUID keeps them in creation order, as RFC 9562 allows.

Can two UUIDs ever be the same?

In theory, yes. In practice the chance is so small that you can treat them as unique, even across billions of IDs.

Are the UUIDs stored or sent anywhere?

No. They are generated on your device and disappear when you leave the page.
